At Buta Assos, we harvest our olives before the regular season and press them using the Mori-Tem technology, which is the world's most advanced cold-press extraction method sourced from Italy. We constantly monitor the industry to ensure that the quality of our olive oils remains consistently at its highest level.

HOW DOES THE PROCESS OF OBTAINING OLIVE OIL WORK?
The olives, carefully cultivated from our olive trees and handpicked when still green before the season, reach Buta Assos' cold-press facility on the same day without touching the ground. Prior to commencing the cold-press process with Mori-Tem technology, the early-harvested warm olives are cooled by washing them with cold water.
Following this step, the olives, turned into a paste in our crushing unit, undergo processing in vertical malaxers to bring out a high polyphenol content. The ongoing cooling process during cold-press procedures aims to keep the acidity level at its lowest, maximizing the beneficial components within the olives to the highest extent.

ANOTHER CRUCIAL TOPIC AS IMPORTANT AS THE EXTRACTION OF OLIVE OIL: THE STORAGE
At Buta Assos, we pay careful attention to every step of the olive oil production process, aiming to deliver delicious and healthy olive oils to your tables. Therefore, the storage process is also a meticulous task, much like the cold-press extraction process. By using cellulose paper filters to eliminate impurities, we naturally extend the storage life of our olive oils. Once the cold-press process is complete, we transfer the early harvest cold-pressed olive oils, kept away from factors such as heat, light, and oxygen that could harm the oil, into steel tanks.
We prevent the olive oil from coming into contact with air by introducing nitrogen gas into the tanks, and we always store the tanks at a temperature of 16 – 18 degrees Celsius.

OUR OLIVE OILS ARE BOTTLED ESPECIALLY FOR YOU WITH YOUR ORDER
The early harvest cold-pressed olive oils, which we have kept in special tanks until you place your order, are carefully bottled after being purified with a nitrogen flush. They are then filled from the tanks into our protective dark-colored bottles, safeguarding them against light, before being sent on their way.
